I never thought of sharing the recipe of this Healthy Baked Sabudana Vada or Sago Cutlet until I again had them on my visit to hometown on Dushehra, they are my favourites. You know she makes the best Sabudana Vada / Sago cutlet, I know I have mentioned this so many times on social media as well but cant stop saying that.

Fluffy light inside and crispy crunchy outside, those cutlets are to die for. She serves them with Tomato, Parsley chutney(sauce)! Just love them…I miss you maa..:(

While trying the traditional recipe of my maa, I was really scared as I didn’t know whether I would be able to pull them the way she does. But the result was just beautiful; after all I have this gift of cooking from my maa only.

Though she makes them in traditional style frying in oil, but this is my healthy version, I baked them and they came out really well. Beautiful, golden brown, crunchy pearl tapioca balls from outside and soft, moist inside. Sabudana Vada /Sago Cutlet is our regular snack back Home, we don’t wait for fasts or feats to make them. Maa keeps it clear; whenever I visit her she make sure to serve me with her scrumptious Sabudana Vada / Sago Cutlets 🙂

Everyone is talking about healthy eating and people are getting more and more aware of the healthy ingredients and alternatives. I myself believes in eating healthy and preaching healthy. Can’t wait to sharing a quick and healthy recipe of my Maa’s Sabudana Vada / Sago Cutlet with my twist.

Enjoy the festivity with this delectable savoury snack in a Healthy way.

Ingredients & Quantity

Cutlet / Vada:

  • 1 Cup Sabudana/Sago
  • ½ Cup boiled Potatoes
  • ½ Cup Peanuts
  • 3-4 Green chilies, chopped
  • ¼ Cup Parsley
  • Salt to taste (fasting salt optional)


  • 2-3 Tomatoes
  • ½ cup Corainder leaves
  • 2-3 green chilies
  • Cumin seeds
  • Mint leaves
  • Salt to taste (fasting salt optional)

How to cook?

  1. Soak Sabudana/Sago for 1 hr in water
  2. Then strain the water and keep it covered for 4-5 hrs to let them rise nicely
  3. Now dry roast the Peanuts and grind them, do not grind into fine powder, we need coarse powder
  4. Now mix it with Sabudana/Sago
  5. Add chopped green chilies, Boiled mashed potatoes, salt, parsley
  6. Mix them well
  7. Now with your hands roll the mixture into balls and flatten to make cutlet shape or fingers
  8. Now put it in the oven for 15-20mins or you can airfryer for 15mins at 160 degrees
  9. Your Sabudana/Sago Cutlet/Fingers ready
