Summers are the time when you want to relax at home; spend time with friends & family. Enjoying fruity chillers with light food & lying idle. These are the days when you don’t feel like doing anything, so do I :)These are the days when you don’t feel like entering in Kitchen, you just look for some quick recipes so that you don’t have to stand in the kitchen & bare the heat.

You know what? I found out a way to avoid these hassles. Guess? I have switched my diet to salads instead of whole cooked meals:) and today I am sharing  a super awesome & super healthy & yesssssssssssss super quick summer special Tofu & Dischi Pasta Salad, loaded with Vegetables, Tofu & Dischi pasta tossed with Italian seasoning & herbs.which you not only will love eating but also enjoy making.

Ingredients & Quantity

  • 1 cup Dishci pasta (You can use any shape of your choice)
  • ½ red pepper
  • ½ yellow pepper
  • ½ capsicum
  • 1 small onion
  • 1 small tomato
  • 6-7 florets of broccoli
  • ½ cup tofu
  • ½ cup sweet corn
  • ½ cup chickpeas (Boiled)
  • 1/4 tbs red chili flakes
  • ½ tbs freshly ground pepper
  • 1 tbs olive oil + more for garnish
  • 1 tbs curry powder
  • ½ tbs oregano
  • 1 lemon
  • Salt to taste

How to cook?

  1. Cut all the peppers, onion & tomato in rough cubes. Also cut tofu in about 1 cm cubes
  2. Now boil broccoli & sweet corn for 5 mins & rinse
  3. Boil pasta with a pinch of salt & 2-3 drops of oil. Don’t overcook. Strain once cooked.
  4. Now in a pan take some olive oil, put peppers &onion, sauté for 2 mins
  5. Add curry powder, pasta, chickpeas, broccoli, tofu & sauté for 2 mins & put off the gas
  6. Now take out the salad in a big bowl, add tomato
  7. Sprinkle oregano, chili flakes, lemon, pepper & salt & toss nicely
  8. Add some olive oil & let it refrigerate for half an hour
  9. Serve with your choice of bread or drink
