Its holiday time and I am heading Home 🙂 but before going on off, I thought to share this amazing recipe for Spinach and Mushroom Wheat Spaghetti Pasta With Ricotta Cheese. This is instant pasta packed with super healthy ingredients and astounding flavours.

You can cook this pasta for a Sunday brunch or could be a quick early dinner. This is an authentic restaurant style preparation. Nice tender Mushrooms and juicy baby spinach combined with Ricotta to give your palette a great texture and flavour. What more you can ask for?? If you are fan of authentic Italian food, this pasta is your sure shot pick blindfolded.

Though this pasta was an experiment, as I wanted to empty my refrigerator before leaving but it’s worth making. From long time I have been avoiding the regular noodles available in market, rather going for this amazing Whole wheat Pasta. Though the texture of this spaghetti is not as smooth as the regular flour spaghetti but trust me it makes a lot of difference when it come to your health and for me health always comes first.

So switch to whole wheat if you really care about your body and want to hog such amazing food without worrying about weight. Go for healthy alternatives and feel the difference.

Ingredients & Quantity

  • 70 gms Whole wheat Spaghetti
  • ½ Tbs Salt
  • 2 Tbs Extra virgin Olive oil + ½ Tbs
  • 5-7 Garlic Cloves, chopped
  • 1/2 Cup Onions, Sliced
  • 1/2 Cup Mushrooms
  • 1 Cup Baby Spinach, chopped
  • 1/2 Tbs Salt
  • 1/2 Tbs Oregano
  • 3 Tbs Fresh Ricotta Cheese
  • 2 Tbs Cheddar Cheese
  • 1 Whole Lemon Juice
  • Black Pepper for Sprinkle
  • 5-7 Cherry tomato
  • Basil leaves for garnish

How to cook?

  1. Heat water in a large pot
  2. Add 1/2 Tbs Salt and 1/2 Tbs Olive oil
  3. 70 gms Whole wheat Spaghetti
  4. Heat Extra virgin olive oil in a pan
  5. Put chopped Garlic
  6. Cook for 3-5mins
  7. Add onions and cook till soft
  8. Then add Mushrooms and cook till it become soft and changes colour
  9. Add chopped Baby spinach and cook till just soft(do not overcook)
  10. Add salt and oregano, toss nicely
  11. Now put Ricotta cheese and cheddar cheese and mix well and cook for 2mins
  12. Strain the boiled pasta and mix with the sauce
  13. Sprinkle some Black pepper, freshly ground
  14. Add ½ cup pasta water to thicken the sauce and let everything combine well  and cook for 2-4mins
  15. Now cut the cherry tomatoes in half and plate the pasta
  16. Sprinkle some oregano, olive oil and Garnish with Basil leaves
  17. Serve with Garlic Bread or just like that
